Amount Ingredient Preparation 1 ¼ Cup Brown Sugar Light, packed ¾ Cup Vegetable shortening Butter flavored (or normal) 2 tablespoons Coffee Cold, brewed (or water) 1 teaspoon Vanilla extract 1 each Egg 1 ¾ cup All-purpose flour 1 tablespoon Coffee beans Finely ground 1 teaspoon Salt ¾ teaspoon Baking soda 1 ½ cup Semi-sweet chocolate chips ½ cup Milk chocolate chips Directions • Preheat oven to 375 degrees; place cookie sheets on pans • Place brown sugar (1 ¼ cup), shortening( ¾ cup) , coffee( 2 tablespoon) and vanilla extract(1 tsp) in a large mixing bowl. • Beat on Medium speed (electric mixer) until blended • Add egg; beat well • Combine flour ( 1 ¾ cup), ground coffee (1 tablespoon), salt(1 tsp) and baking soda ( ¾ teaspoon) • Add the shortening( ¾ cup) beat on low until blended • Stir in both chocolate chips • Drop dough by rounded balls about 2 inches apart onto cookie sheets and pans • Bake one pan at a time (or risk burning) 9-11 minutes (watch carefully) until the cookies are light brown and just set • Watch and check in risk of overbaking • Cool 2 minutes • Remove cookies and cool completely Enjoy!
