* 1C flour * 1/4C brown sugar * 2/3C chopped pecans * 1/2C melted butter * 2 egg whites * 1C sugar * 2C sliced fresh strawberries * 2Tlemon juice * 1C heavy whipping cream Oven 350 degrees Put flour, b.sugar, chopped pecans, and butter in baking pan. Stir then bake for 20 min. Stir a few times while in oven. Take out and form a crust by patting lightly on bottom of 13X9 baking pan. I used a pan a TAD smaller so it would be thicker, but should feel a 13X9 w/no problem. Beat egg whites in mixer until stiff which will take several minutes. Then mix in sugar, strawberies, and lemon juice until strawberries have been blended well. Put aside in bowl and then put 1C heavy whipping cream in the mixer. No need to clean out mixer since you will fold it all together. Mix cream in mixer until stiff peaks form (takes several minutes.. should be Very thick). Then fold in the strawberry mix (DO NOT MIX ......FOLD ...and do not over fold). Throw on top of crumbs, then sprinkle remaining crumbs on top. Freeze for at least 6 hrs. When serving, cut and plate but serve 10 minutes later so ice cream isn't icy. |
