No idea here either. Nothing special planned for Sunday since kids either live away or are busy elswhere.
Having friends over Sat. evening for dinner. Having spinach stuffed chicken breast baked in the oven in wine. Hoping for a nice calm day Sunday so I can catch up on grooming & trimming MY dogs for a change! |

Baked Brie with homemade water crackers Assorted cheese, fruit tray Honey baked ham hamloaf with / pineapple glaze Roasted chicken Delmonico potatoes Sweet potatoes Garden corn ( froze it last summer) Rice pilaf w /pecans Green beans Salad with field greens- pinenuts- cranberries- lemon dressing Deviled eggs Pickled eggs and beets Homemade rolls Mandarin orange cake w/ tropical frosting P'nut butter pie Coconut cream pie Assorted cookies Hummmmmm.... looks like LOTS of carbs when everything is listed. Oh well - I certainly don't care! |

These Potatoes are the traditional side dish for the Delmonico Steak. This dish was made famous at Delmonico's, the first full service restaurant in the United States.
Prep Time: 15 minutes Cook Time: 20 minutes Ingredients: 6 medium potatoes (about 2 cups when cooked and diced) 1 3/4 cups light cream 3/4 cup grated cheddar cheese 1/2 cup buttered bread crumbs 4 tablespoons butter 4 tablespoons flour salt and pepper to taste Preparation: Boil potatoes in lightly salted water until almost done. Drain, peel. and dice. Place in a buttered baking dish. Combine flour and butter in a saucepan over a low heat. Mix into a roux. Slowly add cream, stirring constantly. Simmer until thickened. Season with salt and pepper. Pour over potatoes, toss to coat. Cover with cheddar cheese and sprinkle with bread crumbs. Bake at 400 degrees F. (205 degrees C.) until cheese is golden brown. |

This is very similar, however we shred our potatoes, add 1 cup of sour cream and only 1 cup of cream. The crumb topping has 1/2 tsp nutmeg. Oh- and quadruple the recipe! |

We didn't do anything special this year, and I felt bad! ...even easter egg hunting at church was canceled due to the severe thunderstorms. |
Just to give my wife a well deserved day off I have prepared a curry for our Sunday dinner, on Monday we will have probably have a steak pie. |
