Ingredients: 1 1/2 pounds beef flank steak 1 large onion, quartered and sliced 1 sweet bell pepper, cut into thin slices 1 jalapeno pepper, seeded and chopped 1 tablespoon chopped cilantro 2 cloves garlic, minced 1 teaspoon chili powder 1 teaspoon ground cumin 1 teaspoon ground coriander 1/2 teaspoon salt 1 cup chopped tomatoes 12 flour tortillas Optional Toppings: sour cream, guacamole, shredded Mexican blend cheese, chopped tomatoes, shredded lettuce, salsa, sliced olives, etc. Preparation: Cut flank steak into 6 portions. Combine meat, onion, bell pepper, jalapeno pepper, cilantro, garlic, chili powder, ground cumin, ground coriander and salt in slow cooker. Add tomatoes; cover and cook on LOW for 8 to 9 hours. Remove beef from slow cooker and shred. Return meat to slow cooker. Stir. For the fajitas, spread meat mixture onto warm flour tortillas and add your favorite toppings. Serves 10 to 12. Yum! This wasn't such a hit. It really didn't taste like fajitas at all. There is a Cuban dish we eat in Key West, that is called something like "rags" in spanish...and this was more like that. Tony has requested, that I never make this again. |
I would think that you would have to add more than a teaspoon of cumin to get that fajita-y flavor. |

There are lots of green peppers (which Tony hates), and with regular fajitas you can pick them out. Since everything is cook together for so long, the green pepper taste is mingled with everything else. I think that is why he disliked it so much. I really sort of liked it, but won't make it again if he won't eat it. But, I could come to your house and share yours!!!! (I served refried beans with mine). Please let me know YOUR assessment! |

Come on over Deb-- we are ready to share! This was a HIT! We both loved it. I did not shred the beef however. I sliced it again the grain before putting it into the crockpot with the other ingredients. Then - when I was ready to serve, I just filled the wraps straight from the crockpot, being sure to not get too much "juice". I had cheese and sour cream ready for toppings. We really did enjoy it. I served it with a corn and bean relish. So-- come on over--- we have left overs, and I will be making it again! I may try chicken next time. |
