Anyway,this is a lot more flavorful than it sounds esp. considering how easy it is. skinless chicken breasts taco seasoning mix chunky salsa mexican cheese optional sour cream to top. spray 9X13 dish w/pam. i take 2 chicken breasts and cut them to make 4. ...otherwise, I think the chicken needs to be pounded to about 1/2" (or less) thick. sprinkle generously taco seasoning on top of chicken (don't be shy..promise you'll regret it if you barely put any). then sprinkle salsa over each breast just to cover. again, i fit as much as i can on w/o spilling over I make this and cook when husband gets home 375 for 25 min. Then add lots of cheese, and bake for 5 more minutes. top w/sour cream. this would be something that could work in a slow cooker too, i'm sure. |

I'm making this in the crock pot today. I had chicken breasts, and wanted something different, so I'm giving this a try. I didn't have salsa, so I dumped chopped onion, cilantro and petite diced tomatoes on top. I always love coming home to a surprise meal! Thanks! |

It was FABULOUS! I served it over brown rice (7 ww points) and served corn with it. It was really really tasty, and yes, you need a whole packet of taco seasoning. Oh yum! |

I made this last night and it was awesome!! It was so easy to prepare and took hardly any time to be ready to serve. I used the thinly sliced boneless chicken breasts. I cheated on the rice and made the Knorr's spanish rice which was good too. |

We had this for dinner again last night and loved it. My hubby, who likes to eat very bland food and only recently started to eat spaghetti, even gave it a try and like it. Of course I couldn't put any cheese on his serving, but he did try and did like.

yup...brian ate it all up...
my changes were this... put taco seasoning on a plate...basically ''breaded'' each side with it... served it with a mixture of corn, chopped jalapenos and chopped red onion...cooked with a little salt, oil and a tablespoon of cumin |
