Here's what I've done... Microwave tortillas in damp paper towel to moisten. Preheat oven to 400. Prepare baking sheet with cooking spray. Place filling on tortilla and loosely roll, place seam side down on cooking sheet. Spray with olive oil mister (although by now they're usually already cracked). Baked to 15 minutes. |

If they're cracked before you're baking then it sounds like you're either overstuffing, not microwaving tortillas until pliable, or not being careful?? I sometimes have the same problem and it's one of those. Otherwise, my recipe pretty much says to do the same thing (although I usually freeze mine then bake but you don't need to).

It's not either of those, unless it's the not pliable enough, but they seem to be. Do you make yours with corn tortillas? When I was at the store I saw they had some flour tortillas but the size of the corn ones and those are usually more pliable.
I'll post my recipe once it's fine-tuned...I don't want others to have to deal with breaking taquitos! Mmmm, but they were still tasty, even if they weren't so pretty... |
