Leftover Meatloaf Recipes please! What to do?

I made turkey meatloaf last night and have only a small amount left. Probably enough for me, but not enough for my husband, or for the both of us. I also have some mashed potatoes. Is there anything I can turn it into that doesn't require a whole lot of it? I'd say the amount would be about the amount for a sandwich (but my husband isn't home for lunches and I don't eat that type of food for lunch)...

My 1st response would have been a sandwich.... but, lets see.

How about a stew/soup/chili? You could crumble the meatloaf, add the potatoes (makes a good thickener) then add the appropriate sauce, tomatoes, veggies, spices, etc. And you would have enough for both of you. :D
Mine either sees the trash or what gotsheep said.... SANDWICH!!! sprinkle shredded cheese... goes in oven until melted... mmm..
I would add an egg to the potaotes and make potato pancakes with those. Then -slice the meatoaf thin and top the potato cakes with it. Add a little cheese to the top and broil until bubbley. Green beans and a salad, and call it a day.....


OR-- cube the meatloaf and add to noodles with a nice tomatoe sauce.
