I have long since given up trying to keep them low sodium and low fat because it is met with griping and complaining, and they refuse to eat it. I guess I am an enabler, but, at least they are getting fed, and I do try to at least keep it balanced through the week. On Sunday's I usually take them something a little different, and it is tyically heavier and more hearty. I need to be careful about repeating choices too often, because they will tell me " We just had that a few weeks ago". So, with all that said, I have pulled out some old favorites that were forgotten... We love this, and I hardly ever make it. 1 large or 2 small heads of cauliflower, cooked , drained and mashed with fork 1 8 ounce package shredded sharp cheddar cheese 1/2 cup milk ( I use buttermilk, but regular is fine) 8-10 crushed saltine crackers 1/2 stick butter melted salt and pepper to taste Combine all ingredients and turn into 2 quart baking dish. Bake at 350 until golden brown and bubbly, about 45 minutes. Mixture should be "loose" but not soupy when turned into dish to bake. I add additonal cheese, crackers or milk, depending on size of the head of cauliflower. Frozen works fine too. It is very forgiving.... |

Was going to say the same thing except mr. j doesn't like cauliflower ....but I AM SO going to try this w/a meal this week because "I" would love it, and everyone knows it's always about the pregnant woman Thanks! Good one. |
