I don't think you need to do anything else. I do that too. It seems that so many recipes call for way to much sugar. |
I agree, I usually just cut back on the sugar....it make affect some baked goods, but so far I've not had any issues. |
One half cup would be the MAX, actually 1/4 to 1/3 would be better since the sugar molecule is part of the structure of some recipes. Here's a web site that offers many different type of subs:

Hmm, so maybe I am trying to decrease the amount by too much? I have noticed that it will affect some baking that I do. So I just wondered what the trick was.
Last night I made some quick rolled oats cookies that you don't have to cook (trying to get rid of some old oatmeal). It called for a cup of sugar but I only put a half cup in. Then I decreased the amount of milk used. But the cookies still didn't harden. So thats what got me really wondering what the trick was when you wanted to use less sugar. |
I don't know the answer, but I would think you would only be able to decrease it a certain amount without having to replace it with something, for volume's sake. What about trying to substitute things for other sugars, like applesauce? Although that never really seems to work for me, but I'm a horrible baker! |

i have a banna muffin recipe that uses no sugar what so ever ( will post it if you want it)

sugar less banana muffins
1 1/2 cups all purpose flour 1 TSP baking soda 1 TSP baking powder 1/2 TSP salt 3 medium to large bananas mashed 1 egg 1/3 cup melted butter i'm lazy and just chuck it all in my kitchen aid but ..... mix wet ingredient together and add to dry ingredients bake at 375 for 18-20 minutes makes 10-12 muffins crumb top ( optional but yummy) 2 TBSP all purpose flour 1/3 cup brown sugar 1/8 TSP cinnamon ( i just chuck it in i love cinnamon) 1 TBSP butter rub all crumb ingredients to gether and sprinkle on top before baking |
