What about slicing them REAL thin, dip in lemon juice, and fry them in olive oil. Salt & pepper if desired. I guess you're looking for something that doesn't include frying if someone from WW's gave it to you? |
you can fix them like mashed potatoes - or mix with a mash. One thing to be aware of I think the increase insulin production - so if you are reactive to swings in insulin you should use them sparingly. |
Wow, that's interesting to know. My member said, he just sprinkles them with olive oil and salt, and roasts them. I don't know what they are going to taste like, and that sounded a bit bland to me, but...who am I to question! I just know you guys are dandy chefs and may have some other options! |
Deb, that's how I would prepare them--salt, pepper a spritz of olive oil and roast them. I would compare their taste to celery root. |

You can also slice them really really thin, like with a mandolin, and put them in an arugla salad with some parm and a lemon/olive oil dressing. Very simple and yummy. Maybe add some grape tomatoes. |
