I use my bread machine about 3 times a week.
After adding the ingredients in the order suggested by manufacturer, usually water, yeast, sugar, flour, etc... Let it sit a bit before staring the cycle, or use the timer. I find that most yeasts: bread machine, quick acting, cake, loose, and so forth need more time to ferment than what bread machines allow. Also make sure you are using the right kind of flour for the recipe you are using. It can make a huge difference. I usually keep 5 kinds of flour in stock for different applications. My favorite cookbook for baking bread is Baking Bread with Father Dominique. On his TV show he always explained what when wrong with baking bread. |
you could always change your recipe or do it the old-fashion way.
