Heck, I'm not even a ginger cookie kinda person. Holy mother of crap, these are amazing. They're sooooooooooo soft and chewy, and they move ahead of any snickerdoodle and sugar cookie recipe I've tried. They just cover all the basis of having a little cinnamon ...a little sugar, and all the chewiness you can imagine. Mmm... I made 4 batches in the last 2 days. That's all that's left in the pic below. 3/4C butter softened 1C sugar + a little extra for coating later 1 egg 1/4C molasses 1T oj 2 1/4C flour 2t ginger 1t baking soda 3/4t cinnamon 1/2t cloves 1/4t salt Put butter and 1C sugar in mixer and blend until creamy. THEN add egg, molasses, oj. Don't mix yet. Sift together the rest of the ingred. and dump in wet mixture. Then mix together by hand. Drop into sugar then onto baking sheet. i just sugared the tops and not the whole ball b/c they were sweet. Because of the molasses, this has to stay in the fridge for an 1hr or the freezer for 15 min. This is when I turn on the oven to 350. Bake for 9 min. Take out and do not remove for at least 5 min. They won't be set yet, so this step is a must before removing. |

At first I thought snickerdoodles was a new "breed" of dog! I bet those cookies would be even better with a little lemon curd (like lemon jelly but better) on them..... |
Next time use fresh grated ginger...........I go by dough taste, so can't give exact amount. Figure at least 2 t and probably more like a heaping tablespoon since dried is suppose to be 2x stronger than fresh.......in herbs. Can't say by ginger.
Dang it, now I want some ginger cookies........and no fresh ginger in the house.............tomorrow is another day.......... |

They're my husband's favorite cookie. It's like a sugar cookie with cinnamon ...but much better
