What you will need: Barilla or Fresh Fettuccine Pasta 1lb Box 1 Pint of Heavy Cream 3 to 3.5 Cups of Milk 1/4 cup chopped FRESH Basil (it does make a difference in taste) 1/2 teaspoon black pepper 3/4 teaspoon of salt (I add 1 full teaspoon) the almighty wooden spoon! Pecorina/Romano Grated Cheese *1 Portabella mushroom cap sliced thin (Optional) Boil the pasta and set aside - The key to making a really good fettuccine is to cook it in ALOT of water so it doesn't get sticky or slimy after it boils. Make sure all parts are ready to throw into a frying pan (salt, pepper, chopped basil, etc). Keep Pasta set aside covered. In a large frying pan put the heat between low/medium and add the milk first then immediately add the 1/2 pint of heavy cream. take the almighty wooden spoon and mix it up really well for about 2 minutes. Then you can throw the rest of the ingredients listed right into the frying pan. You will have to stand there for approx 10 minutes consistanly stirring everything together. If the alfredo sauce starts to bubble up, the heat is wayyyy to high!! Add the alfredo sauce to the pasta and mix it all together for a little bit in a large casserole style dish. Cover and let stand for about 5 minutes. When it cools down it thickens a lil' bit. Uncover and stir once again. Garnish the top with Pecorina/Romano cheese. Optional: Adding pan fried Shrimp OR Sun dried tomatos - OR *1 Sliced Pan fried Portabella Mushroom cap! *My alfredo recipe has the mushroom in it but I know some people don't like mushroom at all. If you'd like to try it the traditional Calabrian way, pan fry one of these mushroom caps sliced with one cap full of olive oil. After it's fully cooked dump all of the goodies including the oil into the alfredo sauce while you are stirring it!!! Dig in and Enjoy!! Ciao...lol Michelina~ |
