Help! I need an easy, simple brunch menu!

I'm going to be having 2 couples over for brunch. I need some ideas of easy quick brunch items to make, besides bagels and lox!!!

What about a quiche and cucumber tea sandwiches?

Well I'm too lazy to find the quiche recipes I use right now, but here's a yummy sammie that I served after church and the ladies loved them! They were all gone. Served w/croissants.

* 2C cubed chicken
* 1 medium unpeeled red apple, chopped
* 3/4C dried cranberries
* 1/2C thinly sliced celery
* 1/4C chopped pecans or almonds
* 2T sliced green onions
* 3/4C light mayo
* 2t lime juice
* 1/2t curry powder
* 12 slices bread


combine, cover, refridge until ready to eat. serve as sandwiches (on rolls or whatever). can top w/lettuce.

Bloody marys. French toast. Fruit salad (use kiwi, pineapple and strawberries. Blueberries optional). I would make a whole lotta bacon. Cold cooked shrimp with cocktail sauce.

MMMMMmmmmm.....I love bacon!
I love doing a great ham and biscuits...or ham and crossants...and of course something sweet like cake or cinnamon rolls...my husband would say biscuits with country sausage gravy...fruit plate is always easy and good as well....Paula Deen has a great breakfast casserole...I have made it and everyone loved it...she also makes a french toast casserole that is just plain sinful! I love brunch because really anything goes!

That's so funny...they love doing ham and biscuits here too. Must be a southern thing! It's like every breakfast meeting at my company there has to be ham and biscuits...

Deb--I'd do some fruit, either a platter or salad, or maybe just a basket (ooh, and I love those Edible Arrangments for fruit!), and then you could make some waffles or something and just keep them warm in the oven, and of course bacon (for me it'd be turkey bacon!).

I tend to like healthy foods, so I'm always appreciative when I go somewhere and it isn't all super heavy, fatty food...
I love to do something with phyllo dough. You can make it as light or heavy as you wish, and savory or sweet it is always tastey and looks nice on a platter. Individual phyllo shells are great with a bit of yogart topped with some kind of fresh fruit.
I always like different juices at brunch too.... something I wouldn't normally buy at home.

Or - you can sling them a package of individual oatmeal in a bowl of hot water. That is what a friend did for a crowd of 15 one time. Coffee and Ice water completed our brunch. :lol:

a quick fritatta is good...i made one for dinner the other night..

left over veggies...

i used broccoli, onion, tomato, mushrooms, spinich ...sauted them with some olive oil and garlic....took off the heat, mix eggs, milk and chedar cheese, add all together....

start heating on the stove top till it just starts to congele....then put in the oven at 350 for 15 minutes.....

like a quiche but without the crust! i served it with potato pancakes!

Me too. Mmm... just came back from the store so I could make something with it this weekend!
Just had an idea.... I've done oranges and lemons- scooped out- and filled with yogart, fruit salad, or, even a nice light moose or whipped dessert.... Easy and pretty :D
For brunch I usually serve

a mushroom (mix of several types) and ham frittata
potatoes and onions cubed and roasted in the oven with some rosemary or thyme
mixed green salad
small fruit salad with whatever is in season

and may add a baguette
chunky fruit salad, sliced fruit platter, french toast with strawberries, fresh blueberry or banana muffins, yoghurt topped with passionfruit, mangoes etc
... :D it's a bit decadent for breakfast but what about strawberries half dipped in chocolate?
if these are even in season over there?

thats what we're having over here.....mmmn
doing one of those vegetable pizza always go fast too. made it yesterday as a matter of fact, but it was all for me (cream cheese w/ranch for dressing) laid on two crescent rolls laid on top of one another, cooled, and already baked. then chopped veggies on top.
