New Year's Day Cake Recipe

I don't have the time to post some other things, but didn't want to post this after the day had passed.

It's just cake from a BOX baked in coffee tins. Take out, and line the flat ends together. The other ends naturally came out rounded for the ends. Stick in freezer while still warm but out of tins to lock in moisture. Then the below recipe for frosting and add cocoa for the color.

* 2 (8oz) room temp cream cheese
* 1/2C room temp butter
* 2C powdered sugar
* 1t vanilla

mix together. store in fridge.
The tall things are blowers, but it's hard to tell b/c they're wrapped in plastic wrap so the boys can use them to blow later.

With all the ridges how did it come out?? Did you use parchment inside?

I'll send Paul down, he's great at spun sugar snow and meringue mushrooms for decoration.

This looks so much easier than making the flat cake and rolling it!

The one I used didn't have ridges inside. My neighbor just told me she was a wedding cake decorator ................way back in the day, and said I could borrow her cans whenever I wanted. For groomsmen cakes, she uses the full size cans, but they're harder to find b/c most are going to plastic. I do put parchment paper under any cake I do. I got it from a cake video I saw. Makes for a smooth top (the bottom of the cake), and a lot easier to move around esp if you're doing layers.

She told me that putting the cake in the freezer while it's still warm (and out of the pan) makes all her clients tell her it's the moistest cake they've ever eaten. So, when I tried it... I really didn't' expect it to taste too different than ...box cake, but boy was she right. I've never had cake so dang melt in your mouth before w/nothing added to make it that way.
I have got to try this. One thing, I have no coffee cans. Ours come in a bag. Whole beans and the k-cups.

When you put them in the coffee cans, do you have to change the listed baking time? That's what I'm bad at...I don't know how to adjust things accordingly.

Oh, and doesn't coffee come in a paper cup from Starbucks? :twisted:

Could someone give me a step by step instructions on how to bake this cake in a coffe can ? I can't for the life of me figure the instructions, and are the ingrdients on the bottom of the recipe for the icing ? It looks delish if I can figure out how to make it. :oops: :oops:
