Dressing: 1/2 Cup sugar 1 tsp Salt 1 tsp Mustard 1/2 Cup Oil 1/4 Cup Vinegar 1 tsp Celery Seeds Combine all ingredients, except celery seeds, in a saucepan. Heat on low stirring well till sugar dissolves. Add celery seeds. Chill until thickened in fridge. Just before serving shake very well (I store it in a canning jar). Dressing keeps well in fridge for 2 to 3 weeks. Salad: 1/2 of a head of lettuce big bunch of spinach leaves 1 medium Red Onion, cut into rings 1 quart fresh Strawberries Put onions in a colander and pour a saucepan of boiling water over them. (This softens and sweetens them). Drain. Break lettuce and spinach into bite size pieces, add sliced strawberries and mix lightly. Add the onion rings. Just ebfore serving add dressing, to taste, and toss. ** I have added cooked, diced chicken to this and pecans. It was really fantastic with those added!** |
