You can't even tell it's shrimp in the pic, but at least you get the idea! * 1C water * 2/3C sugar * 1C walnuts * 4 egg whites * 2/3C corn starch * 1/4C mayo * 1lb shrimp, peeled&deveined * 2T honey * 1T sweetened condensed milk * oil for frying 1. Stir together the water & sugar in a small saucepan. Bring to a boil and add really however many walnuts you want to eat this with. Boil for 2 min. Drain water, then fry in same pan for another 2-3 min (so they are crunchy). Sit to the side. Whip egg whites only in bowl until FOAMY. Stir in cornstarch until it dissolves (should be pasty like glue ...so you may have to add more cornstarch ...I did). I like my batter to stick so I make it thick and put in fridge for a little while. Heat oil to 360 (wait until hot). Then cook shrimp for about 5min (really until each side is golden). You may need spatula to break them a part which is no biggie b/c they stick together since it's egg whites cooking. Remove with a slotted spoon & drain on paper towels. I doubled the sauce: stir together mayo, honey & sweetened condensed milk. Add shrimp. Sprinkle the candied walnuts on top and serve. Served with fried rice and some broccoli cooked in a little olive oil, pepper, and garlic powder |
