Fast and Easy Pork Chop Recipes

anyone have a good idea for pork chops that are not dryed out.
I am out of ideas.

Have you done a homemade version of "Shake and Bake" and oven roasted them?
We just had this big slab of lean pork loin. Sooooo good. Made it like we would chicken Parmesan. Was the best (as long as you can cut/pound the meat 1/4"). Nice change from the ordinary and it's one of the only meat item my son will eat. He won't touch any other meat including hamburgers which is very weird. We top with ketchup but my mom is more southern and likes hers with one of those McCormick packs of gravy.
I can only make pork two ways without drying it out....pork tenderloin on the grill or pork green chili in the crockpot....otherwise, i make the crappiest pork chops in town...... 8O
I've found the key to moist chops, if you are pan frying, is soaking them in buttermilk ( or sour milk) for an hour or two before preparing.

I take them out-- dry them off- dip in egg/ milk mixture, and coat in Panko crumbs. Fry in a shallow pan -- I use peanut oil.....


Turn when chop is golden brown. Depends on the thickness how long to fry. Take from skillet and let rest for 5- 10 minutes for juices to redistribute. While they are resting I add flour to the dripings and make a rouge. Add milk, salt and pepper. The BEST gravy!!! Now I am hungry...

we like it super hot but it doesnt need to be....

1 pork tenderloin (we get ours at costco) cut into cubes
1 large onion cut up
4 garlic cloves

brown all together in some oil...add a little s & p....dump into crockpot..

add

1 can chicken stock
1 can diced tomatoes with green chili
2-4 jalapenos (i leave the seeds in)
5-8 hatch green chilis (again i leave the seeds in)

then i add cumin, garlic powder and some onion powder...

set it on low and cook away.....about 6 hours...an hour before serving, i sometimes add a teaspoon of sugar (depends on how freakin hot it is) and thicken it with some flour/water....you may need to add some more salt and pepper...this is really just to taste.....

i serve it burrito style...wrap in a flour tortilla, sprinkle some cheese on top and put under the broiler till cheese melts....yummy!
I like anything wrapped in a tortilla! Yum!
