Pikes Peak apple crisp. Basically a traditional apple crisp but you throw a jigger of Grand Marnier and Amaretto over the apples before putting the crumb topping over all. Of course as chef you get to sip either liqueur before putting it away.
Costco sells a nice little "snack": puff pastry in small muffin cups with brie, apple slice and I think walnuts and a little brown sugar crub over top. We'll get JO to hammer out the recipe. |
The simplest and easiest apple pie recipe I know is also one of the best.
I use store bought pastry that you just unroll. Too easy to buy it and I've never been very good at pastry making. So unroll a pastry sheet and put it in your pie pan. Peel and core and slice your apples. Layer them in the pie pan. Over the first layer, sprinkle 1/4 cup granulated sugar and a teaspoon of cinnamon. Do the same with the second layer. Put 4-5 pats of butter on the top layer of apples. Roll out the top layer of pastry over the top of the apples in the pie pan. Sprinkle the top of the pastry with brown sugar and put another 4-5 pats of butter on it. Cut an "X" or two in the top so it can breathe. Bake at 450 for 10 minutes then reduce heat to 350 and bake an additional 35-40 minutes. YUM. |
I wish! I'm only allowed to make apple pie when we have guests which the last time I did was thanksgiving last year for a potluck. Mr. J thinks it's like being forced to eat liver!
I've said this before but I just can't find a good pie crust that I like pre-made. I like it a certain thickness. I'd have to use the one I posted (under chicken pot pie). It's the best, imho This is the recipe I use though. It's fail proof. So yummy! make crust i posted. Slice thinly 8 green or mix with red apples. Melt 1/2C unsalted butter in saucepan. Stir in 3T flour to form a paste. Then afterwards add 1/4C water and 1/2C sugar to a boil then simmer. e. Also add tsp cinnamon and dash of nutmeg! Then dump apple slices in pie so they're slightly overlapping. Follow it with the liquid (to the top). Bake at 425 for 15 then bake at 350 for 40 minutes. YUM! HOW EASY IS THAT! (you can also mix apple slices with liquid prior, but I don't think it's as pretty ...and of course add a top crust) |
