ooooooooooooooooooooooooooooo I love cranberries. I see many interesting dishes here. Thanks for the posting.
One of the first meals I cooked as a new bride was a high sugar cranberry glazed chicken. We loved it but even back then we recognized, too much sugar. The recipe here is more realistic and can probably we modified further to be nearly sugar free. |

I mentioned the cranberry glazed chicken above and thought, "I really must find that recipe." (It was on the C&H brown sugar bags when I was first married.....so an oldy) Well, here it is in the cookbook originally put out by Soutwest OES rescue, but left over copies went to So Cal OES rescue (if Jane still has any). Title is "Floozies in the Kitchen and Dudes at the Stove."
1/2 cup seasoned flour (salt and pepper or some other seasoning salt of choice like Emeril's Essence) 1 chicken in serving pieces Wash and dry the chicken. Roll in seasoned flour, brown in oil and cook for 30 minutes. Remove from pan. To pan add: 1 1/2 cup fresh cranberries 3/4 cup water 1 cup brown sugar yeah, I wonder if you can get by with less Cook 5 minutes Mix together: 1 tablespoon apple cider vinegar 1 tablespoon flour 1 teaspoon pumpkin pie spice Add to cranberry. Cook and stir constantly until thick. Return chickn to the pan and continue cooking 30 minutes until chicken is done. Watch carefull so as not to scorch the chicken (you may need to add a bit of water from time to time). Serves 4 to 6 |
