this is the UK version so might not make sense.
1 mug cold tea (no milk) 8 ozs (225g) mixed dried fruit 8 ozs (225g) self raising flour 4 ozs (125g) soft brown sugar ( I use just under 3 ozs) 1 beaten egg 2 tablespoons marmalade (optional) METHOD Soak mixed fruit overnight in the cold tea. In a bowl combine flour, sugar, egg and marmalade(if required) Add the wet fruit mix. Mix well. Put into greased 675g loaf tin and bake for an hour at 180 oC/350 oF/gas 4. Leave to cool serve sliced with or without butter. (if you prefer a drier tea loaf leave out the marmalade, and drain the fruit) I make this recipe at Christmas, and use 4 ozs dried fruit, 2 ozs chopped glace cherries and 2 ozs of chopped dried apricots. you can also sprinkle the top with dessicated coconut, or crushed almonds! |
That sounds reallyreally good. The trend in American baking is to measure by ounces instead of cups so the recipe is just fine. |
