1 1/2 bananas, ripe and mashed
3 cups flour 1 1/2 teaspoons baking soda 1/4 teaspoon salt 3/4 cup butter, softened 2 1/8 cups sugar 3 large eggs 2 teaspoons vanilla 1 1/2 cups buttermilk Icing 1/2 cup butter ,softened 1 8 ounce package cream cheese, softened 1 teaspoon vanilla 3 1/2 cup icing sugar Garnish chopped pecans Directions Preheat oven to 275 degrees- not a mistake 275 degrees Grease and flour a 9 x 13 pan In a small bowl , mix mashed banana with the lemon juice and set aside In a medium bowl ,mix flour,baking soda and salt then set aside In a large bowl , cream butter and sugar until light and fluffy Beat in eggs one at a time and then add vanilla Add flour alternating with buttermilk Stir in banana mixture Pour into pan and bake for one hour or until cake is done Remove from oven and put directly into the freezer for 45 minutes For the frosting cream the butter and cream cheese and add other ingredients and beat until smooth Top with chopped nuts . This is the best banana cake recipe ! Very moist and yummy. |

This recipe sounds very yummy. I think I'll bake one up this weekend. Hubby has been really enjoying the cupcakes I've been baking lately and will really enjoy the Banana Cake also. Thank you for the recipe. |
