Takes 10 min to throw together! * 4 boneless chicken breast halves - cooked&diced (I use one package of tyson grilled chicken strips found in the deli section which only equals a heaping 1C ...next time I will use two packages b/c we ate so dang much and wished we had leftovers) * 1 stalk celery, diced * 1/4C green onion, chopped * 1 small green apple, diced * 1/3C raisins (I used bag of raisins mixed w/cranraisins) * 1/3C seedless green or red grapes, diced * 1/2C chopped toasted pecans or almonds * 1/8t black pepper * 1t curry * 1/2C fat-free mayo Note: I omitted the celery b/c ours was bad. With the 1C of chicken I used, I felt 1/2 an apple was efficient, 1/2t curry, 1/4C mayo (however much was needed to coat salad but barely), but I still used the same amount of raisins and grapes, and only 1/3C of Almond accents (flavored almonds in salad section) Mix all together. Put in fridge for a day. Wrap like a burrito in pita or tortilla. Enjoy! You HAVE TO let this sit a day before eating because it tastes totally different after the curry and other flavors have had time to come together. Takes good right after making but tastes ohmygoodness delish... a day, two, or three after! |
