* 1.5lb ground beef * 2/3C breadcrumbs * 1/3C minced onion or green onions * 1 egg * 1/4C milk * 1 1/2t ground ginger * 1/2t salt * 2-3T cornstarch * 1C packed brown sugar * 15oz can pineapple chunks - drained, with juice reserved ( i add a tiny can as well if I have extra guests) * 2/3C white VINEGAR * 2T soy sauce * 2/3C chopped green bell pepper * 2/3C chopped red bell pepper Combine beef bread crumbs, onion, egg, milk, ginger and salt. Shape mixture by rounded tablespoonfuls into meatballs. Bake at 350 for 20-30 min (until done). Note: I always make meatballs ahead of time and when everyone is ready to eat, I make the sauce and let the meatballs sit in it until heated through. Ready in about 7 minutes! In large skillet, combine corn starch in the reserve pineapple until dissolved. Then add green/red peppers, brown sugar, vinegar & soy sauce. Mix until smooth, then add pineapple and meatballs. Cook, stirring constantly, until mixture really thickens [must boil] and becomes dark, about 5 minutes. |

That looks very tasty. I want to try it but do you think there is any way of cutting down the sugar and still having it turn out alright? |
I always double the sauce. You don't have to. I also make "more" so I have leftovers, so that's how I wrote the recipe. It works w/1lb of meat, and 1/2C bs, still 15oz of pineapples, 1/3C vinegar, 1T soy sauce, still same amount of green/red peppers. |
