4 eggs 1 cup Bisquick 3 medium zucchini 1 onion 1 cup grated cheddar cheese 1/2 cup vegetable oil Grate zucchini (skin on) and grate onion (no skin ). Manually mix with Bisquick, grated cheese and oil. Beat eggs by hand until well mixed and pour into mixture and mix well. Pour into an ungreased square pan. Bake uncovered at 350 degrees F for about 40 minutes until golden brown. Let cool before cutting into squares. Enjoy! |

My sister always makes this recipe. I just went into my file and it's the same recipe... minus some pepper and parsley.
She always used to make mini quiches out of them. Hmm, I wonder if I still have Dad's zucchini's in the fridge. I only need 3 quarters of one of his. They are the size of baseball bats and twice and fat. I could totally go for this right now. |
