2 lbs ground beef 3/4 cup basil leaves ,chopped 3/4 cup drained and chopped sun dried tomatoes packed in oil 1/2 cup grated onion 3 garlic gloves minced or finely chopped 1 tsp salt Lemon grilled Fennel : 2 medium sized lemons for zest and juice 4 medium sliced fennel bulbs, tops removed, sliced into rings 2 tbsp olive oil 1/4 tsp salt 12 slices bacon Arugula Fig Topping : 1/2 cup chopped pecans 4 tsps balsamic vinegar 4 tbsps olive oil 6 fresh figs, stemmed and sliced lengthways 3 cups baby arugula roughly torn 2-3 tbsps oil for brushing on the grill 3/4 lb Swiss cheese sliced thinly 6 hamburger buns Preheat Grill to medium hot. Combine the meat, basil, sun dried tomatoes, onion ,garlic and salt in a bowl. Shape into 6 patties and refrigerate for 1 hour. To prepare the Fennel: Grate 2 tsps of lemon zest . Add 2 tsps freshly squeezed lemon juice . Toss the fennel ,lemon juice,oil and salt. Put the fennel in a grill basket and grill until soft 10-12 minutes. Set aside. Heat a large nonstick skillet on the grill and fry the bacon until crisp . Remove the bacon and extra fat and toast the pecans in the same skillet until golden. Whisk the vinegar with the oil in a small bowl and salt to taste. Combine the figs, argula and toasted pecans . Toss with just enough dressing to coat. Grill the patties 8 minutes per side. Put the cheese on the patties during the last 3 minutes of grilling. Toast the burger buns on the grill. To Assemble these unusual and delicious burgers : Place equal portions of the warm grilled fennel on each bun bottom, followed by the melted cheese topped patty , 2 bacon slices and an equal portion of the fig arugula topping. |
