Dressing: 3 tbsp raspberry vinegar 1/3 cup vegetable oil 1 tbsp sugar 1/4 cup fresh raspberries, mashed Salad : 10 oz bag baby spinach 2 ripe pears, cored and thinly sliced 1/2lb (250 g) Brie cheese, room temperature, sliced Garnish : rasperries slivered almonds Instructions : To make dressing: Whisk ingredients together and refrigerate until ready to serve. Wash spinach and remove long stems. Divide among 4 plates . Garnish with pears, cheese. raspberries and a sprinkle of almonds. Drizzle with dressing. |

Yummy! I'll have to try this one. I always try new dressings, and already do basically the same for my salads but use strawberries. Raspberries are hard to come by, but they're starting to show up more now. Never tried pear in my salad before. |

Sounds like a delicious salad. I think I would use Almond Oil instead of vegetable oil for the dressing. |
