1 cup milk 2 cups sugar 3 cups sifted self rising flour 4 eggs 1 tsp pure vanilla extract Preheat oven to 350 degrees Grease and flour 3 (9 inch) round cake pans . Using an electric, hand mixer,cream butter until fluffy. Add sugar and cream well for 6-8 minutes. Add eggs 1 at a time , beating well after each addition. Add flour and milk alternately to creamed mixture, beginning and ending with flour. Add vanilla until mixed. Divide batter evenly between baking pans. Level cake in pans by holding pan just above counter a couple of inches and dropping it flat on to the counter. Do this to release air bubbles and give you a more level cake. Bake for 25-30 minutes or until done. This recipe is so versatile . You can add coconut or chocolate or whatever you like and no one will know it's the same basic recipe. If you're using the fancy mixers then adjust your mixing time. I use my little $20 hand mixer and it works great. |
