You need: 4 chicken breasts 1 box frozen spinach 300 gram -defrosted and excess liquid squeezed out 1 jar sundried tomatoes Boursin cheese 150 gram or any goat cheese or cream cheese Alfredo sauce any kind 2 garlic cloves or the equivalant amount of garlic powder, salt and pepper , butter or olive oil, toothpicks ( sherry or wine optional) I get everything at Costco With a mallet, pound a chicken breast fairly flat but not disintegrating ! I lay the chicken between 2 pieces of waxed paper to flatten. All over the chicken spread a thin layer with softened boursin cheese .1 boursin = 4 breasts Spread a small amount of sun dried tomatoes on top of the cheese. I spread it lenthways towards the top of the breast Use sundried tomatoes to your taste. Remember they have a strong taste Divide the drained spinach into 4 equal amounts and spread one portion on top of the tomatoes on the fattened chicken breast Now roll up the breast and secure with long toothpicks Carefully place breasts in frying pan with butter or oil and some of the garlic and brown both sides of the rolled chicken. I place the browned breasts in a greased, glass lasagna pan but any baking dish will do. I deglaze the frying pan with a bit of sherry or wine, 3-4 tablespoons, but you could use a bit of water . I mix the degaze with the alfredo sauce and then pour it over the chicken breasts. Using the deglaze gives the sauce a bit more flavor. Bake uncovered at 350 for about 35 to 45 minutes. Check half way through cooking time and spoon some of the sauce over the breasts if you like. This is a general guide as you know your oven best . I often use the convection feature on my oven too. However these temps and times are for an ordinary oven. You can easily fool around with this recipe substituting ham, using different cheeses or a different sauce, etc. It's easy to personalize to your own tastes. Serve with rice and a salad. I often use dehydrated cherry tomatoes from my garden. I dehydrate them and put them in freezer bags and throughout the year I defrost them and use them in sauces and recipes like this . |
