How can that be you say???????? Welllllllllllllllllllllllll, it seems that McDonalds Cream of Broccoli Soup and a Chocolate Milk Shake is NOT health food ( it is meat free but not health food). This past year of classses, work and clinical has made eating healthy a very challenging enterprise. I had a Dr's appointment a few weeks ago and discovered my Cholesterol, Triglycerides and Blood Sugar are all WAY TOO HIGH Me, the Cardiac Nurse who tells people EVERY FREAKING day how to be "healthier" has developed some very bad habits. I guess grabbing a hunk a cheese on my way out the door to class isn't healthy either. My Dr has convinced me to start eating chicken....... after much nausea and disgust I have discovered I can manage boneless skinless chicken breasts. SOOOOOOOOOOOOOOOOO I'm looking for EASY QUICK chicken recipes |

Now that summer is in sight....grill a few chicken breasts ahead of time and either eat them as part of a sandwhich or with vegies on the side. You can vary which spices you use. I like garlic powder, salt and pepper. Or italian seasoning...or any mix made for grilling is good. |
We just got a grill for that very reason. But I really prefer recipes that have the breast cut up and mixed with other stuff, that way it doesn't seem so.......meaty. |
How about learning some stir frys. Lots of veggies and bites of chicken.
They do have stir fry pans for the grill, I have one. Use it for food that can fall through the grill. Good luck. also cook books on stir frying. |
i like to marinate the chicken in either italian dressing or ranch dressing...that will help change the flavor (though not the texture..) and its better to grill with it a marinaide...
how about this ....super summer easy and healthy... 2 chick breast cooked and cubed 1 box of wild rice cooked to directions 1 can drained corn (or fresh grilled and cut off cob) 1 large tomato seeded and cubed 1/2 red onion chopped 1 or 2 jalepenos (depends on how daring you are...)chopped 1/2 red bell pepper chopped bunch of cilantro chopped mix all together.. mix some olive oil, lime juice, salt, pepper, touch of cayene pepper all together and pour over salad and combine together... its super easy, summery and healthy...i add cubed cheese too but you can leave that out..... |
I LOVE this dish. Quick as long as you have a food processor or are fast at chopping.
The only pic I have sucks and I'm sure looks appealing on a Wiggles dish ...but it's so yummy even w/o the yummy raspberry sauce that I use for everything !! Pistachio Chicken * 1C minced pistachios (I use a can of pistachio lovers found next to any planters peanuts.. and I just take out the almonds but include the cashews in it..it's the exact amount needed) * 1/2C seasoned breadcrumbs * 2T dijon mustard * 2T evoo * 2T honey dash of salt and pepper * 2 chicken breasts cut into very thin strips turn oven to 500. use a BAKING SHEET (this makes it nice and crispy) and coat with pam mix pistachios and breadcrumbs together, and the other stuff in another bowl. dip chicken. put in oven. THEN turn it down to 375 WITHOUT opening it again. Bake for 20 min or until pistachio has turned a nice golden color. The yummy raspberry sauce which makes the dish look very classy: # 1/3C seedless raspberry JAM (cannot substitute w/preserves # 2T oj or oj concentrate # 2T white wine vinegar OR balsamic bring to boil and then simmer until desired consistency. If you like coconut, I posted a delicious coconut chicken recipe that also takes 20 minutes (cut in chunks). |

you could grill the chicken with any seasonings and then chop it up to have over a salad or make a wrap in a tortilla (whole grain) with salad fixin's for on the go. That way you get a little chicken, veggies and it can be convenient. We love chicken fajita salads....saute the chicken with taco or mexican spices and onions and green/red/yellow/ peppers....good as traditional fajitas too As you can probably tell I operate without recipes at least 70% of the time. Then after I have made something using a recipe a couple times I wing it from there too |
here is one that i found...instead of whole chicken breast you can slice them legnthwise or cube them.....also i googled cubed chicken recipes and this came up...you might want to scroll thru some of theses..

Mrs. J you crack me up with your food pics. When my Mom died and I had to go through her things I found hundreds of pictures of FOOD, every fancy meal she cooked she took a picture of. Like you she would also take pictures of just a paticular food item. We never knew she did that, some day YOUR kids are going to sort through your pics and say WHY did mom take all these food pics |
Yeah, but at least we know what we're looking at when she takes the pictures! We'd probably have more of an understanding of that chicken stuffing sandwich if a picture was included!
I know of a lot of unhealthy vegetarians. They eat mostly carbs and not enough fruits veggies or protein. And a lot of fat seems to be included in the recipes. One good way to eat chicken is to shred it. That way you don't have any massive pieces of chicken that you might not like. Then you can just throw the shredded chicken into anything, from pasta to rice to soups to salads or sandwiches... |

There are many really good chicken substitutes! If you want something breaded try morningstar farms chicken patties/nuggets, if you want something boneless/skinless for the grill Q'orn makes a really great substitute (super good on the grill with bbq sauce!) |
Ginny, try these, you could just cube the chicken. I do them in a crockpot but you could easily convert to a saute pan.
-------------------------------------------------------------------------------- I don't actually have a recipe but I do this: Boneless chicken breast 1 large can of (I use Muir Glen) tomatoes, not drained salt and pepper a touch or more of garlic Italian seasoning to taste, I make my own but you can use any premixed brand Tomato paste, I use the tube kind but canned is fine A pinch of sugar and a dash of balsamic vinegar Layer and cook on low until chicken is tender. You can add mushrooms, onions, zucchini, whatever you like. Serve over pasta. Chicken with apple and cream sauce 1 cup apple juice or to cover chicken 1 tablespoon each Dijon mustard and lemon juice ½ teaspoon dried thyme (I use more) ¼ teaspoon dried rosemary Salt and pepper to taste Mix above ingredients in small bowl. Put boneless, skinless chicken breast in crock-pot and cover with apple juice mixture. Cook on low 6-8 hours or until tender. When chicken is done pour the liquid into a skillet and boil gently until reduced slightly in volume (about 8 minutes) ¼ cup sour cream 1 teaspoon each honey and cornstarch Mix sour cream, honey and cornstarch in small bowl. Having just finished the long fast w/o meat, dairy, fish........all I can say is yes, there is still food to eat. I feel like writing, 1001 ways with lentils/beans, etc but I think it's already been done. Thumbs up (ooh, there's an emoticon we could use) for Morningstar products......even a Boca burger once in awhile is fine, just add plenty of misc stuff (tomato, onion, sprouts and soy cheese).
Drive ins are SinCity. Try Subway and load up on the veggies, minimize the cheese and meat. In my mind it's a Salad Sandwich. Actually the big guys have salads too but sometimes the hunk of bread is really needed. For me that's once in a great while......I'm real carb senstive. Switch over to soy or almond milk. Doesn't work in hot stuff but you can make a wicked coffee frappe when you get home! Or cold chai tea. I haven't quite mastered drinking the milk straight, but it does end up on my morning oatmeal with cinnamon to help hide the flavor. You can take an apple, core it out and fill with peanut butter.....once in awhile......the PB is also loaded with fat. The only way I can deal with tofu is in a fruit smoothie......banana and strawberry can hide most anything. As for quick chicken recipes, if you cube the boneless breast, it sautes up quickly and can be used in everything but dessert. Remember you only need protein the size of your hand palm...hopefully your hand isn't like mine, a truck driver size........a nice petite palm is preferred. I assume egg whites are out too. ........ good base for a veggie omlet. |
I always keep some of the canned chicken on hand. In little flat cans - like tuna.
It makes a good quick chicken salad sandwich - I like mayo, onions, celery and seasoning salt and pepper. Also, half a can mixed into a salad makes a great chef salad. I am currently hooked on lettuce, ranch dressing, chicken or diced lunchmeat, and ranch flavored slivered almonds. Yum - even had it for supper tonight. I love it when Todd is on nights - I can make food I like! |

I loooooooooove meat! But I can feel your pain. Any chance of the dr talking you into fish? Very good protein! Well, if its not fish sticks, lol. I am a borderline hypoglycemic, gotta watch my blood sugar and make sure it doesn't get too low. Which is hard sometimes, I forget to eat . Anyhoo, my hubby requested tilapia before he deployed, and I found I actually like it quite a lot! It has an interesting sweet flavor, not fishy to me. Now if this is an unhealthy suggestion, please forgive me, lol, I am used to the drs. pushing protein at me. My favorite of favorites is a really well cut and cooked steak! Mmmmmmmmmm! |
