* 2 cups fresh strawberries (1C diced, 1C smashed ..i used the flat part of my wide knife then sprinkle with sugar) * 1 1/2C and 1T flour (3 1/8C if making 2 loaves) * 1C sugar * 1/2t cinnamon * 1/2t salt * 1t vanilla (2 if doubling) * 1/2t baking soda * 1/3C oil * 2 eggs, beaten * 1/2C chopped pecans 350 Grease&flour 9 x 5 inch loaf pans put prepared strawberries in bowl after sprinkling with sugar and set aside. mix flour, cinnamon, sugar, salt, baking soda. then add oil, eggs, vanilla into the bowl, strawberries, pecans. mix only until blended. Bake 45-55 min or until toothpick comes out clean. |

Made this again today but doubled the ingred so I could freeze slices for breakfast. This time I didn't double the cinnamon when I doubled the rest of the ingred [which btw includes 4C strawberries or 1pint], didn't use pecans, used half wheat flour, and 1 snack size container of unsweetened apple sauce followed by the rest of the oil called for in the same measuring cup, and forgot to add vanilla!!! Yum!!
Oh, I also didn't sprinkle strawberries with sugar. I just dumped the 2C of sugar on top of the strawberries while I prepared the other ingredients. |
are are breaking the rule that baking must be precise..........a girl to my own heart, experiment, experiment, experiment and eat the disasters before anyone else finds them. |
