didn't take long to make either! * 14 oz bag of KRAFT individually wrapped caramels ...unwrapped (can't substitute with Brach b/c their caramel is just nasty when cooking) * 7T heavy cream (can substitute w/milk) * 2C flour * 2C quick oats * 1 1/2C brown sugar * 1t baking soda * 1/2t salt * 1C melted in microwave butter * 1/2C semisweet chocolate chips * 1/2C chopped pecans (walnuts are fine too) Oven 350. line 9X13 casserole dish with foil in big bowl, mix flour, oats, b.sugar, baking soda, and salt. mix in the melted butter. divide mixture in half and use first half to press into dish (like you would to make a crust for pie). bake for 8 minutes. Remove and sprinkle chocolate chips and nuts evenly over the top. in pan over low-med heat, melt caramels and heavy cream until smooth. takes awhile. keep stirring. pour caramel mixture on top and then pour rest of crust mixture on top. press down softly so it all sticks together to form top layer. Put in oven for 25 minutes. Take out and DO NOT TRY CUTTING NO MATTER HOW TEMPTING. Must cool. Cut in squares. (it's easier to just gently pull the entire foil out of dish after it's cooled and then cut into squares. cleanup is done!) store airtight container. room temp. |

As long as you're not dieting as I don't think I'd help any.
I'm dieting so this totally doesn't help me but I do a pretty good job of eating one bad thing a day and leaving the rest for the wives or my husband's coworkers when I take them to our meetings. |
I'm on the - hungry all the time and pregnant so I can eat whatever I want- diet. I think we would go together nicely. |

The recipe calls for a cup of melted butter. Is that one stick (which is one cup), melted, or melt a whole bunch of butter til it equals a cup? |

Well my butter is 1/2C a stick, so yeah.. if yours is 1 stick = 1C 1C prior to melting Oh, and it's a lot easier to make the crust (the bottom) FIRST before melting the caramel. That way it can cool so you can top with the chocolate chips/pecans and have the caramel ready while it's still warm. At least for me!! Forgot how I worded the instructions. |
