Cheap, Easy Caramel Popcorn
* 1/2C butter * 2C brown sugar * 1/2C Karo light corn syrup (mine was some generic brand b/c it was cheaper) * 1t salt * 1/2t baking soda * 1t vanilla * 3 bags popped popcorn (i used ACT II buttered popcorn if you were curious) oven 250 Place popcorn on big turkey roasting pan (sprayed w/pam) or I used two aluminum foil disposable roasting pans placed side by side in oven. Keep warm in oven while making rest to make stirring easy OR be quick about mixing the rest of the ingredients like I am On stove heat butter, brown sugar, syrup& salt. Bring to boil while stirring then let boil for 4 minutes WITHOUT stirring. Take off oven and mix in soda & vanilla. Will appear foamy. Pour over popcorn, sirring real well but gently to coat. Bake for 45 min, taking out every 15 minutes to stir well. Then let cool, it will harden, and break apart to put in ziplock bags or airtight containers. Then run to the store b/c you'll probably be like me and always want to make more. |

| Friend makes this recipe as Christmas gifts but she adds chocolate covered peanuts and sometimes other stuff. Good thing she uses small containers.......maybe 2 cups at most.........one sitting and it's GONE. |
| Jo, you are amazing. How do you find time for all of this cooking????? Everytime I look on this Index, you have another recipe here.
I can barely get ANY dinner on the table, and I don't even have kids!  (Not unless Oscar counts.......)

Maybe I fall into the always "pregnant, barefoot , and in the kitchen" category!! I hate not having fresh goodies when the other wives come over for meetings, etc. 
Thankfully the board will get a break from all my recipes as I'm sure things will be too crazy when the house is up on the market and we're trying to get ready to move. |

| As I always tell barney... sorry charlie, not yet! I want to be... Mr. J would love some twins... but there's a certain thing that has to come along that won't while I bf for a year. Expect an announcement the same time I'm always preggers next year. |
