Help! Chicken crockpot (slow cooker) recipes needed!

I had a crockpot (or slow cooker as we say here in uk) for Christmas...2005.. and have not used it yet :oops:

Since being diagnosed with 2 auto-immune disorders, the second in the last week, I have decided my diet has to change. I have been told to cut out flour, so no bread or pasta, and cut down on dairy products. NOW.. the truth is.. I LIVE on pasta, bread, chocolate and cheese. If I have veg they are usually frozen, so I have decided to make a major diet change aka Marianne :wink: :D

From now on it's fresh veg and fruit all the way :P

So back to the crockpot... I need easy recipies to start with, preferably vegetarian, or with chicken as this is much cheaper than beef and I'm not that keen on lamb.

Any help would be wonderful!!

I've made chicken in the crockpot. I will try to find the exact recipe, but its something like this:

1 whole 4 lb chicken
fresh carrots cut in big chunks
3 red potatoes cut in big chunks
1 onion quartered
1 can chicken broth
1 tablespoon olive oil
2 cloves garlic
salt and pepper to taste

Brown chicken in frying pan in oil
layer veggies on bottom of crock pot
top with chicken
add garlic, salt/pepper
pour chicken broth over everything.
Cook on low 6 - 7 hours.

You can cut up the chicken into pieces as desired.

Its a really good recipe, it's very easy and the house smells wonderful.
My favorite crockpot recipes come from my book - Campbell's Slow Cooker Recipes. (Campbell's - the soup company) I think it is available outside the US. I bought as a part of a 3 book set a few years ago. The ISBN for this book is: ISBN 1-4127-2181-4, Publications International, Ltd.

I am too tired to type recipes now (just got home from work all night), but there are lots of good ones in it!
frozen chicken breasts (4)
3/4 packette of powdered italian dressing mix
one chopped onion
one cup white wine

add all together...cook on low for 7 hours...one hour before serving add mushrooms and fat free creamcheese...

serve over mashed or riced potatoes (riced being healthier) and a fresh green veggie or salad!
I don't actually have a recipe but I do this:
Boneless chicken breast
1 large can of (I use Muir Glen) tomatoes, not drained
salt and pepper
a touch or more of garlic
Italian seasoning to taste, I make my own but you can but it already mixed
Tomato paste, I use the tube kind but canned is fine
A pinch of sugar and a dash of balsamic vinegar
Layer and cook on low until chicken is tender. You can add mushrooms, onions, zucchini, whatever you like. Serve over pasta.




Chicken with apple and cream sauce


1 cup apple juice or to cover chicken
1 tablespoon each Dijon mustard and lemon juice
½ teaspoon dried thyme (I use more)
¼ teaspoon dried rosemary
Salt and pepper to taste

Mix above ingredients in small bowl. Put boneless, skinless chicken breast in crock-pot and cover with apple juice mixture. Cook on low 6-8 hours or until tender.

When chicken is done pour the liquid into a skillet and boil gently until reduced slightly in volume (about 8 minutes)

¼ cup sour cream
1 teaspoon each honey and cornstarch

Mix sour cream, honey and cornstarch in small bowl. Add to skillet and cook, stirring, until mixture is thickened.
