buy some ritz crackers (preferably low sodium but does NOT make a difference) or "famous wafers (chocolate)" buy 10 oz bag of andes mints chocolate get microwaveable bowl. place chocolate inside and melt (took me a minute). chocolate kept form, so you have to stir w/a fork to melt it. dip ritz in melted chocolate. turn using 2 forks. place on baking sheet that is covered with wax paper (wax paper is essential) let them set and in 5 minutes, and you've got thin mints that are always in season! store at room temp. I PROMISE YOU THEY TASTE THE SAME TOO!! (btw, if you don't have andes mints at your store, you can buy 1 lb of bittersweet chocolate and peppermint extract. pour extract in until it tastes a little pepperminty ...about 2 tsp) |

I LOVE Famous Wafer chocolate cookies. Very plain but SO good! For me, this recipe would work best with them instead of the Ritz.

I didn't know that! Mr. J doesn't allow us to buy too many things in that snack aisle. He just looks at the preservatives and sodium and freaks, so if I make everything ...there are no labels I'll have to try them but I swear these taste EXACTLY like GS cookies (with same even thickness all around). I didn't want to say but I used vegetable ritz crackers and can honestly not taste that I did. |

I'm just kidding. Chocolate mint is the best! I made peppermint brownies at Xmas, and they were delicious! I'll have to try making the thin mints after we eat all of the real ones. |
Update: I just made them for mr. j's entire office and used nilla wafers and biscoffs (that european cookie given to eat while flying) ...and they tasted SO MUCH better covered in melted andes mints. It's more believable that you made the entire thing by scratch. I think wafers are the way to go with these to make them exactly like girl scout thin mints. The biscoffs are ginger-type cookies that give it a nice twist, which I loved. |
