I skipped the cooking chicken part and just used a pre cooked chicken cut into pieces. * 2t olive o il * 2 boneless skinless chicken breasts, cut into bite-size pieces * 8oz Andouille Sausage diced (of course kielbasa can be used but I think it's gross esp after having andouille with cajun dishes) * 1 diced onion * 1 diced green bell pepper * 1/2C diced celery * 2T minced garlic * 1/4t cayenne pepper * salt&pepper to taste * 14.5oz diced tomatoes with chiles (i used can and a half) * 2C UNCOOKED rice (do not use minute rice) * 2 can chicken broth * 3 bay leaves * 1T Worcestershire sauce * 1t hot pepper sauce 1. Heat oil in large skillet and cook chicken. Then add kielbasa, onion, bell pepper, celery, garlic, cayenne, tomatoes, salt and pepper. Cook until onion is tender and translucent. Add rice then stir in chicken stock and bay leaves. Bring to a boil, reduce heat, cover, and simmer 20 minutes, or until rice is tender. Worcestershire sauce and hot pepper sauce. Remove bay leaves and eat! |

Looks delicious! I'll bet it was yummy. You sound just like me, Joah. Every time I fix a new recipe for my SO, I ask him if we are keeping it on the "list" or not. Last night's Chicken Bog got a thumbs up. He took left overs for lunch today, so it gets to stay on the list. |
What is Chicken Bog?
Well, I'm still a newlywed, so I have to make our own "recipe book" for our kids when they get married like his parents have done for us. What's sucks is my husband is REALLY picky, so what I think a normal guy would like... well, my husband probably wouldn't. He grew up eating better stuff than this microwave dinner child. Drives me bonkers although it's probably a good thing. He doesn't like anything I can think of out of a box unless it's soda or beer and he doesn't like many of the good southern foods I grew up on (gravy, most casseroles, anything greasy or a "kid food" like macaroni or hot dogs) ...although some nights I may him suffer so I can enjoy it. |
Chicken Bog is pretty simple & it's basically a yummy southern comfort food. I don't have the exact spice measurements, but this is pretty close.
3 lbs of chicken (I used breasts & thighs) 2 lbs summer sausage or beef kielbasa 1 chopped onion 3 bay leaves 1 stick butter 2 T salt 1 T garlic powder 1 T black pepper 1 T red pepper 3 cups rice (regular - not minute rice) Cut the sausage into 1/2" pieces. Put the chicken, sausage, onion, butter, bay leaves & seasonings into a stock pot with 8 cups of water & bring to a low boil for 40 minutes. Take the chicken out of the pot and allow it cool a bit. Take the chicken off the bone. Put the rice into the pot and let it cook for about 10 minutes. Add the chicken back to the pot and continue cooking 10-15 minutes until most of the water is absorbed. Stir & Serve. Serves 10-12 people. We had seven people last night and everyone had enough left overs for lunch today. I had made it for my family before, but it was the first time he had eaten it. He called me a little while ago and told me it was good for lunch, too. It's delicious and very filling. |
