* 3/4C flour * 1/2t baking soda * 1/4t baking powder * 1/2t salt * 1/2C butter * 1/2C smooth pb * 1/2C sugar * 1/2C brown sugar * 1 egg * 1t vanilla * 1C quick cooking oats * 3T butter, softened * 1C confectioners sugar * 1/2C smooth pb * 2.5T heavy whipping cream oven 350 in large bowl, use mixer to cream 1/2C butter, 1/2C pb, sugar, bs, vanilla. then add egg. then w/o mixing, i dropped the flour, baking soda, baking powder, salt, and oatmeal on top in same bowl. Then stirred. Put in freezer while I made filling. made it easier to work with (pressing with fork instead of sticking to my fork since it's real sticky) drop by teaspoons (used my small scooper) and press each cookie w/fork down to about 1/2" Bake 350 for 9-10 min. let sit for 4-5 min. Filling: Use mixer- 3T butter, confectioners sugar, 1/2C pb and hc. Spread filling onto half of the cooled cookies, then top with the other half. Doesn't make many at all so you have to double the recipe. I did not however double the filling. Was plenty for me. |

Mr J hates to see the camera full of pictures of what we ate for dinner or are having for dessert. I took one of our halibut dish last night which held up dinner, and he just sat there rolling his eyes. |
ha ha ha! I also love when you take pictures of what you make. It's like in cooking magazines I tend to make the food with pictures next to it, rather that just recipes that are listed.
