I have to come up with something quick. What kind of soup can I make that's easy, will feed about 10 people and requires no draining of fat or any of that business. I also do not want to have to go out and buy a million ingredients. I have 5 cans of chicken broth at home if that helps anything. What about a tortilla soup? Can I do that? How hard is that? As you can tell, I know nothing. |

I've done this turkey chili recipe several times, and its easy and delicious:

this serves 6 so double...... 1 large can chicken broth.. 1 box frozen butternut squash thawed 1 onion sauteed 1 cup white wine to saute onion in (or use more chicken broth) 1 can chipolte in adobo sauce (use super sparingly) goat cheese to taste... saute onion in wine..add super small amount of chipolte..add to chicken broth...add squash..use one of those puree thingys and smooth soup out... add goat cheese to taste... add salt and pepper to taste... super easy quick and delicious! |

Two easy soups:
Green Chile Chicken Enchilada soup...this feed four (or 2 hungry college kids) 2 cans low fat cream of mushroom soup 1 can green chiles diced 4 potatoes peeled and chunked 1 lb. chicken (get the precooked stuff) diced 1/2 to 1 cup skim milk Cook the pototes in the microwave or boil. If cooked in soup the soup scorches. Combine all and heat through. Add more milk if you like it a bit more runny. Serve with corn bread muffins?? Sausage Soup Ole Serves about 6 1 lb. sausage....I use hot Italian, I think it was designed for chorizo. Cook ahead and slice. 1 1/2 cups carrots thinly sliced 1 envelope onion soup 5 cups broth (chicken is fine) 1 1lb. can kidney beans drained and rinsed 1 1lb. can tomates (I use the onion and pepper stuff) 1 1lb. can corn drained 1 tsp. oregano 1/2 t. cumin Dilute the dry soup with chicken broth, add carrots, tomatoes and seasoning. Cook until carrots are done...sorta. Add the sausage and beans, simmer to mingle flavors. |

that's because they were making the soup base from scratch......did they also have to pluck the chicken? Don't laugh.....some of the best soups I've had started with rounding up the bird, etc, etc. If you already have a wonderful soup base, making the matzo balls isn't too hard. Never could talk my Mom into making it......."go to Hirschmans if you want that!" It's tough being a goi in a Jewish neighborhood. |

here is a easy potato soup recipe...if you have real potatoes youre gonna have to grate them first..... We just finished the event. I ended up making Susan's chicken enchilada soup, except I didn't dice everything small and called it a stew. It was a big hit, in fact, I actually won the prize for favorite soup (well, stew)!

I actually did cook the chicken because I had made them for something else. In fact, I had marinated it in mesquite, which seemed to give it a nice pop. It may have been what won me the prize. I got a $50 gift card to Bed, Bath and Beyond. Not bad, huh? |
