You'd be hard pressed to find a groomer who can take the time (and you'd pay a fortune if he's really matted) Are you sure you don't just want him shaved?
I think one of the semi-local breeders is a groomer (and two are human hairdressers...! Sense a trend here?) If I can find her contact info I can ask her, but most groomers just think it's kinder to the dog (and them) to shave. Or we can have a grooming 101 session and I can teach you to demat him yourself (takes time and patience and the right tools more than skill) and then you can do it yourself bit by bit and send him to the groomers for the finer touches...? While dematting by a groomer is probably possible...
You could always start to finger pull apart the mats and take a pair of rounded tip scissors and cut parallel to the impossible mats. A long slow process for you, but not 8 hours of hair tugging. Shaving and getting a fresh new start with good intentions of keeping up with the intense grooming required for a long and mat-free coat might be kinder to your pooch! Good luck!
