Fake twice baked potato casserole..

buy one box of hungry jack instant potatoes....figure out your serving size..follow directions until you get to the milk...use sour cream instead

add shredded cheddar cheese
add chopped scallions
add bacon crumbles (optional)
possibly add more sour cream

spray a baking dish with pam, dump the pototoes in, throw in oven till cheese is all melted and top is slightly brown.....

tastes pretty darn good and if no one sees the box they may not know that they are instant!!

I would so eat that up!!

I have to wait for my boys to grow up to eat casseroles with me since mr. j hates them :( Have no idea how anyone could. I heart them very much!
LOL! What's not to love here......especially the more sour cream! Bacon, cheese, OK scallions make me burp but that's only deadly for others.....potatoes.........white cheddar or yellow?? Like it matters.
I hate weepy pies. I want them to stand straight upright. Well, today I got one to stand up...well half of it.

Today I grabbed 2 no sugar instant puddings and decided it was black and white pie time. No skim milk as per instructions so used what I had on hand, regular milk (for husband's cocoa) and whipping cream (unused from T-giving.) The chocolate pudding was 1 cup cream and one cut whole milk (yes, oy vey). Vanilla was just regular milk. The whipping cream layer is just perfect. Vanilla weeps as per usual....but not as much as with skim milk. Moral.....use whipping cream. Yes, there is a texture difference, the chocolate is more like mousse.
Susan - I need to know more about this black & white thing you're making. Is it a trifle? I am a pudding fan and I always like B&W anything. Sounds tasty. Keep talking. :D
Nothing special. I had a graham cracker crust just waiting for a filling. Chocolate would have been better, but not sitting atop my frige at the moment. Not wanting to make anything from scratch and wanting to limit sugar...especially this time of year...I grabbed the Sugar Free puddings, one choc fudge and one vanilla. Not having skim milk in the house I used what I had, the whole milk and 8 ounces of whipping cream. The whipping cream and a cup of whole milk went into the chocolate. I spread high quality shaved cocoa in the bottom, carefully pour the choc pudding in and topped with more shaved cocoa.......giant handfuls each time. Then the vanilla pudding was made with whole milk minus the splash of vanilla I added for extra ooomph. That was poured over the top and another giant handful of shaved cocoa over that. The whipping cream and whole milk made that lower layer set up just like in photos.....no weeping. The top layer slipped a little when cut, but not as bad as with skim milk only.

I really liked the texture of the lower layer with all that fat in it :lol: :lol: of course I liked it. I wonder if you could use the mix with 2 cups of whipped cream to get closer to a mousse? I won't be trying it anytime soon, but it's a thought. The extra shaved chocolate and the high quality vanilla helped take it from boxed to something better. QUICK, QUICK recipe and looked neat too.
