Yummy Coffee Cake for Breakfast!

We don't have bananas for Mr. J's shake (something he has to have) and it snowed too much to go to the store, so I thought I'd make this for him to eat tomorrow morning.

It gets two thumbs up from the piece I just shared with lil J.

* 1C packed brown sugar
* 2/3C flour
* 1 t cinnamon
* 1/2C room temp butter

Cake:
* 2C flour
* 2t baking powder
* 1/2t salt
* 1/2C room temp butter
* 1C sugar
* 1 egg
* 1 t vanilla
* 3/4 milk (or buttermilk)
* 1C fresh blueberries
* confectioners' sugar for dusting


1. 350 degrees. Use Pam to grease 8" springform (or use bundt pan).

2. Topping: Mix 1C brown sugar, 2/3C & cinnamon. Then cube real small 1/2C butter (room temp). Crumble together until it's a course texture.

3. Cake: Beat 1/2C butter, sugar, egg & vanilla until creamy. Then stir in 2C flour, baking powder & salt. Last add in milk.

4. Spread half the batter into greased pan. Then all the blueberries. Half of the topping. Rest of batter. Then rest of topping.

5. Bake at 350 for 60 min.

6. Sprinkle confectioners' sugar (optional)

That's exactly what I was thinking, Steph! I never have all the right stuff to bake something like this on the spur of the moment. Unless, by some chance, I've just been on a baking spree and bought tons of supplies. This looks delicious, Jo. I'm not a blueberry fan, but substitute rasberries and I'm there! :D

That is crazy talk to not like blueberries even if raspberries are good. :lol: blueberry is the best!!! I thought about trying blueberry in a can next time too, but I wanted to make it a bit healthier.

The flavors blended so well together overnight and Mr. J really liked it. We used to get stuff in a box (crumb cake).
Sounds delicious, and I just happen to have the stuesel already made up and cherry pie filling to substitute for the blueberries. Thanks.

Mr J. sounds like a good friends husband...he also can not live without banana's for breakfast...lol....

how do you think that would turn out with rhurbarb???? that is a seriously misunderstood fruit..or is it a veggie????? :wink:
Yummy! That with a cup of hot tea would be perfect on a cold day!
I HAVE that recipe. I have made this buttery cake for many years.
I like to use different fillings (use you imagination).
Thinly sliced apples w/ sugar & cinnamon, instant coffee & nut filling, poppy seed filling, nuts & raisins, peaches, cranberries, it is very versatile & impressive to bring anywhere!
Banana orange shakes........boy I remember those! Does fill one up. Plus you can all all sorts of other fruits and wheat germ, liquid vitamins.

Husband finally opted for a quieter breakfast and now eats his fruits.
