Every Christmas Eve, I make a Cherry Cheesecake for dessert. I make the no bake kind - cream cheese, whip cream & sugar only refrigerated with the graham crust and cherries on top. Anyways, I have requests to make the kind of cheesecake you have to bake. Anyone have a good receipe? Preferably one with a low egg count. |

I have some, what kind are you thinking? Plain or something seasonal like pumpkin or cranberry?

Actually I would be up for anything. I usually do a cherry cheesecake...but any receipe would be great! |
All my recipes for full size cheesecakes are at the cottage but here is an easy and good one for mini ones:
2 8oz packages cream cheese 3/4 cup sugar 1 tsp vanilla 2 eggs 18-20 vanilla wafers Mix all ingredients well. Place 1 vanilla wafer in cupcake liner, place in muffin pan. Fill each liner 3/4 full, bake at 350 for 20-25 minutes. I have made variations of this: add mini chocolate chips and peppermint extract chopped cranberries and fresh orange zest, sub orange extract if you happen to have it, top with candied orange peel and sugared cranberries pumpkin and pumpkin pie spice swirl caramel into mixture, add chopped pecans add melted chocolate serve cherry pie filling or strawberry sauce on side add some powdered expresso for mocha flavor, nice topped with chocolate coated coffee beans |

German Chocolate Cheesecake
Makes 12 servings 2 cups crushed shortbread biscuits 1 Tablespoon of Cocoa 4 oz of Magarine, melted Filling 4 oz dark chocolate melted 1lb cream cheese 3/4 cup of sugar 2 eggs 3/4 cup sour cream 1. Combine crushed biscuit crumbs, sifted cocoa and melted margarine. Press into base and sides of a greased or lined 9" springform tin. Chill Filling Beat Melted Chocolate and softened cream cheese together. Add sugar and eggs and beat well. Mix in Sour Cream Pour into chilled crust and bake in a moderately slow oven for 1 hour. Cool in oven and chill overnight in fridge. Decorate with Whipped chocolate cream and stawberries or Grated Chocolate or all Chocolate Whipped Cream, strawberries as well as the Grated Milk Chocolate YUM. Can you tell I LOVE chocolate. |

Made it last year for christmas and had the top decorated with strawberries and little chocolate santas all around the edge and the whipped chocolate full artery clogging cream in the middle. If it is too much to handle chocolate wise then plain ol boring whipped cream and healthy berries is OK too. Guess what I am making for this year for the family, it was a hit last year with all. Heck christmas only comes around once a year, out the window goes the diets and calorie counting. I am going to match santas belly this year, ho ho ho. |

This is almost identical to the one I use except I use a gingersnap crust.
PUMPKIN CHEESECAKE Prep: 30 minutes Total: 8 hours To prevent the top from cracking, be careful not to overmix the batter, and do not open the oven door while the cake is baking or cooling inside the oven. Note: To make the crumbs for the crust, pulse graham crackers in a food processor until finely ground. Or, if you prefer, substitute the same amount of packaged graham-cracker crumbs. Ingredients Serves 12. FOR THE CRUST 1 1/4 cups graham-cracker crumbs (from 10 whole crackers) 1/4 cup sugar 4 tablespoons unsalted butter, melted FOR THE FILLING 4 packages (8 ounces each) bar cream cheese , very soft 1 1/4 cups sugar 3 tablespoons all-purpose flour 1 cup canned pumpkin puree 2 tablespoons pumpkin-pie spice 1 tablespoon vanilla extract 1/2 teaspoon salt 4 large eggs, room temperature Directions Preheat oven to 350 degrees, with rack in center. Assemble a 9-inch nonstick springform pan, with the raised side of the bottom part facing up. Make the crust: In a medium bowl, mix cracker crumbs, sugar, and butter until moistened; press firmly into bottom of pan. Bake until golden around edges, 10 to 12 minutes. Make the filling: With an electric mixer, beat cream cheese and sugar on low speed until smooth; mix in flour (do not overmix). Add pumpkin puree, pie spice, vanilla, and salt; mix just until smooth. Add eggs one at a time, mixing until each is incorporated before adding the next. Place springform pan on a rimmed baking sheet. Pour filling into springform, and gently smooth top. Transfer to oven; reduce oven heat to 300 degrees. Bake 45 minutes. Turn off oven; let cheesecake stay in oven 2 hours more (without opening). Remove from oven; cool completely. Cover with plastic wrap; refrigerate until firm, at least 4 hours. Unmold before serving. First published |
