This also only took 20 minutes from start to finish, and the results are divine!! I ate the piece missing in the pic this morning (2nd one I've made), and it's hard for me to not keep going!! I'm not great at presentation, but this is what it should look like. It's sooooooooooooooooooo good. It's really supposed to be just a jello AND ironically a side dish, but it tastes so much better in a graham cracker crust. * 1 6 oz package of raspberry gelatin mix * 2C boiling water * 1 (20oz) can crushed pineapple, drained super well * 1 (21oz) can blueberry pie filling * 2 or 3 pre-made graham pie crusts * 1 (8oz) package cream cheese * 1/2 C sugar * 1 C sour cream * 1 t vanilla 1. Combine boiling water and jello mix until dissolved (should take 2 minutes to fully dissolve). Take off stove and put blueberry and crushed pineapple. 2. Then in another bowl, cube cream cheese to make it easier to mix. add sugar and use mixer until it's the same consistency as thick whipped cream. Beat sour cream & vanilla. 3. Spread cream cheese mixture evenly along bottom and sides of crusts. I just did a thin layer and it was plenty! 4. Top with jello mixture 5. Keep in fridge until jello has set (i do this overnight). |

I think you just saved me! I suppose to make a dessert for Tuesday, but schedule is hectic and back/knees, etc killing me. This looks like it's in my can-do category right now. To the grocery store tomorrow!
I hope to still get one of those biscotti made....on that cookie list, but tonight only the recliner or bed will be achieved. |
Made the pie last night....made 1 pie with plenty of extra for a skinny second one....but just put it in a bowl with a cream cheese stuff on top. That way I got to taste test before party today. (I agree Jo, the crust should set it off nicely) I threw in some frozen berries..just a couple handfuls but decided after tasting the bowl left overs, I'm putting toasted walnuts on the top and a decorative whipped cream edge before presentation. The nuts will has a bit of texture and cut the sweetness and the whipped cream (probably will be Rediwhip will be festive. Definately a keeper recipe but my old taste buds need a bit more jazzing. Maybe some Cointreau in the cream cheese??
