Carrot and Cashew Nut Roast 1 med size onion chopped small 1-2 cloves garlic minced 1 tbsp olive oil 2 cups carotts, cooked ans mashed 2 cups cashew nuts ground 1 cup whole wheat breadcrumbs 1 tbsp tahini 1 1/2 tsp caraway seeds juice of 1/2 lemon 1/3 cup stock from carrts Saute onion and garlic in oil til soft Mix together all ingredients and season to taste Place in greased load pan Cover with foil and bake 350 for 1 hour Remove foil and bake for a n additiona 10 mnutes Let stand in pan for at least 10 minutes before turning out on to platter Yummy for for vegetarian types!!!!! Also lends itself to all sorts of sauces, use your imagination! |
