1/2 cup firmly packed brown sugar 1/2 cup melted butter 1/3 cup orange juice 1/4 cup bourban (I use a splash or two more ) 1/2 teaspoon salt 1/2 teaspoon pumpkin pie spice 1 cup miniture marshmallows (I don't use these, since they are not vegatarian friendly) Cook sweet potates in boiling water to cover, 30 minutes or until tender. Drain. Let cool to touch; peel and mash. Combine mashed sweet potatoes, brown sugar, and the next 5 ingredients in large mixing bowl; beat at medium speed until smooth. Spoon mixture into 1 1/2 quart casserole dish. Bake at 350 for 25 minutes. Top with marshmallows, if desired, and bake another 5-10 minutes or until brown. NOTE: The recipe says to use a hand mixer, but I do it by hand. I don't like it too smooth. I like a few "lumps". I have, in the past, used pineapple pieces instead of the marshmallows, and that's pretty good, but I usually forget to do that. Also, this freezes really great This recipe does not have a strong bourbon flavor, but a really nice hint of it. Enjoy! |
