3 lbs lean stew meat cut and trimmed 1 bag of pearl onions..small and peeled 4 large celery stalks cut into 1/2'' pieces 1 small bag baby carrots 1/2-3/4 lb sliced mushrooms 2 cups V-8 juice 1 cup red wine 1/2 cup quick cooking tapioca 1 tablespoon salt (or less) 2 teaspoon sugar 1 teaspoon dried basil 1 teaspoon pepper (or less) heat oven to 300 degrees mix all ingredients together in a large bowl pour into a lightly greased 3-4 quart pot..cover bake for 5 hours...stir 3-4 times during this period... serve over mashed potatoes. can be reheated at 200 for an hour...freezes well..crock pot friendly too...cook on med-low for 8 hours.... a friend made this for me when i was recouping from surgery...i have to say that it was phenominal!!!!!!! |

What does the quick cooking tapioca taste like in it? I'm not sure I like tapioca. And are you refering to tapioca pudding mix when you say "quick cooking"? Pardon my ignorance. |

tam, tapioca is really just a thickening agent..you wont taste or even see the little lumpies that you do in pudding... ps tapioca pudding gets its flavor from other ingredients not from the bumpies |

Tapioca pudding always freaked me out. Like there were little bugs in my pudding or something. |
Good! I wanted to try it, but that tapioca thing was scaring me off. This will be dinner tomorrow night. I'm going to crock pot it, though. I'll let you know how it turns out. |

SheepieBoss, even I near the big city couldn't find frozen pearl onions for another recipe. I ended up buying fresh and blanching them. Maybe now that the holidays are getting close stores will carry the frozen pearl onions. |
I couldn't find them either, Paula & Susan. I didn't even think to look for frozen, though. I just looked in the fresh produce section. I had to improvise and chop a red onion instead. But, I like red onions, so I didn't mind too much.
I went home at lunch to let the wigglebums out to potty and man, oh man, does that stew look and smell delicious!! But, I have to say, IMO, it needs to be served over rice instead of potatoes. So, I'm going to do that instead. Seriously, though, if it tastes any where near as good as it looks & smells, I'm gonna be in for a real treat. The new beaux should be suitably impressed. |

Back to the topic of frozen pearl onions. If you can't find them, use the fresh. Drop the fresh ones into boiling water for about 3 minutes, take them out and put under cold water. Cut off the ends and peel when they are cool enough to handle. Then add them to the crockpot. |
Fresh pearl onions are a pain!
I can't believe some stores don't have the frozen ones. Even out in nowheresville VA we have them. |
Paula, thanks for the tip on the onions. I didn't think to look for frozen. I'll go to the frozen section next time. The stew was fantastic. Seriously delcious!! The new beau approved it for a repeat performance. He even took home leftovers for lunch tomorrow.
