1C canned pumpkin 1C sugar 1/2C vegetable oil 1 egg 2C flour 2t baking powder 1t baking soda 1/2t salt 2t cinnamon 1t milk 1T vanilla 1.5 C semi-sweet chocolate chips (or less as it tends to be a lot) 1/2C chopped walnuts (optional) Combine pumpkin, sugar, vegetable oil, vanilla& egg. Then stir together flour, baking powder, cinnamon & salt. Dissolve the baking soda with the milk & stir in. Add flour mixture to pumpkin mixture. Mix. Add chocolate chips & nuts. Drop by spoonful on greased cookie sheet. Bake 350 10 minutes or until lightly brown&firm. note: add 3-4 drops of red food coloring to mix to give them an orange pumpkin color. overcooking still leaves them chewy and delish! |

They actually don't sound THAT bad for you, aside from the 1/2 cup oil. You could use the splenda baking sugar for the sugar and maybe even try substituting some applesauce for some of the oil. And you gotta have SOME fat in your diet! |

Conversion needed what is the measurements for C in the receipe. ? I am presuming T means Teaspoon. So would C mean cup ? Can it be done with Fresh mashed pumpkin or Pumpkin Soup ? I do pumpkin scones with the mashed cooked Pumpkin would that be the same for this one ? |

yes, you can substitute the fresh pumpkin for canned. I always use my own from the garden. |

Okay - got the apple crisp made last night and just put the last batch of doggie cookies in the oven, so now I'm starting on these. They just sound too good not to try them.
My neighbors, family and co-worker are going to be the beneficiaries of lots of yummy treats. I just love this fall weather!! After the long, hot, summer, we finally got two days of cool, autumn temps. It's only supposed to be 77 here today. It was so crisp & clear this morning, I just had to bake something. |

I doubled the recipe, so I have a bunch of them. I packed some up and took them to the neighbors, gave them to my parents when they came for dinner last night and brought some to my co-worker today. So far, rave reviews from everyone. You need to try them. |

I really do like them. They're not terribly sweet and they have an unusual texture for a cookie because of the pumpkin. I used splenda and applesauce instead of sugar and oil, so they are not very fattening either.
Also, I was thinking that you could use dried cranberries instead of chocolate chips. I think they'd be good with pumpkin, too, and even less fattening. |
