By themselves they have little flavor. Peeled, raw and cubed into salads is a crunch. They can be stuffed with a yummy something, sauce over the top and baked. Think of them as a "holder" with virtually zero calories. |

When I told my friend, Diane, I had bought "coyote" squash...she told me to serve them with breast of roadrunner! I better make them fast, I don't think they last too long in the fridge. |
Remember, they need to cook longer than zucchini so if necessary, precook before stuffing. |
