I've done zucchini pancakes before, salted and squished zucchini mixed with egg and a pinch of cheese and onion for flavor (flour too but I forget and haven't needed it) but they were......dull. So why not with Greek pesto: basil leaves, feta, lots of garlic, olive oil and chopped olives. Not wanting to chop olives I decided to serve them separately. Oh my! At first the pesto was pure garlic but after a few minutes catching it's breath the basil and feta came out. Served with the pancakes, fresh tomatoes, kalamata olives and pita triangles....oh my it was good. Tomorrow nite I'll shove the pesto under chicken skin for husband along with a salad, but tonight it was heavenly......no vampires either tonight! |

the only draw back to garlic that i have found, is when you eat too much of it....your breath can actually wake you up from a sound sleep

Guess we'll have to make a roadtrip to Gilroy for the Garlic Festival. I'll have to leave Paul at home because when he gets too much garlic, he reeeeeks! Maybe I do too but he's too much of a gentleman to say anything |
haha.....im sure i stink too actually no one around me likes as much garlic as i do....when i cook for others i tend to taper off a tad bit more than i do for myself.....
when a recipe calls for 2 cloves i usually add 5....then i add garlic powder....... garlic and salt, my 2 most favorite condiments!! |
