2 quarts (total) of thinly sliced cucumbers and onion. (suggest the seedless, burpless English cucumber-takes about 3- and no more than one onion, or can be left out entirely in favor of generous shakes of powdered onion) 1/2 Tablespoon salt 1/4 cup water Sprinkler salt over cucumbers (and onion), add water and stir to blend well. Cover and liet sit at room temp overnite. In the morning, drain but DO NOT rinse. 1 1/3 cups sugar 1/2 cup cider vinegar Mix together and pour over cucumbers and mix well. Put into containers or ziplock bags and freeze. Remove 15 minutes before serving. Should be icy and slushy for serving. Can be refrozen. |

I've never had it frozen but cucumbers and onions is a summertime favorite around here. That along with a bowl of sliced tomatoes from a garden...YUMM!! We use regular white vinegar unstead of cider vinegar though. I'll have to give your way a try!! Thanks for sharing! |

My polish twist on that is soak thinly sliced cukes with salt and vinegar....over night is best....squeeze out excess vinegar and mix with sourcream..... this is great with stuffed cabbage!!!!!!! |
Mmmm. I made something like this the other night. I had a cucumber someone at work had given me from their garden.
I thinly sliced it. I thinkly sliced about 6 radishes. Put them in a bowl. Put about a quarter cup apple cider vinegar, 2 tablespoons sugar, red pepper flakes. Let sit in fridge overnight. It was really good. |

I make a cucumber salad: very thinly sliced cucumbers (I don't bother removing seeds) (slice, salt, cover overnight and drain) very thinly sliced onion lots of chives - fresh are best but dry work cream to about 2/3 the depth of the mixture I never serve this till it has some time to rest, it makes all the difference. Many of us have the vinegar/sugar on cucumbers in our files (I love the idea of radishes!). This tastes the same but the consistency is like a slushy with chunks. At first I was put off by it, but it blended so well with the BBQ sausages and other stuff at the picnic I thought you might like to try it. No, most men who still pretend to be macho won't like it, it's sissy. |
A Sushi restaurant that we used to go to made a frozen cucumber thing.
It was so yummy!!! My Grandmother always made the cucumber salad with vinegar and sugar... Mmmmm |
